Purely Organic Vegetable and White Bean Soup

Another amazing recipe from my book Wellness for Women
(4-6 servings)
· 1-Pound Organic Cannellini Or Other White Beans, Cooked
· 1 Tablespoon Organic Extra-Virgin Olive Oil
· 2 Organic White Or Yellow Onions, Chopped
· 4 Cloves Organic Garlic, Minced
· 5 Organic Carrots, Chopped
· 3 Organic Celery Ribs, Chopped
· 2 Organic Potatoes, Diced
· 28 Ounce Can Organic Fire Roasted Whole Tomatoes, Diced
· ½ Head Organic Cabbage, Shredded
· 6 Leaves Organic Kale, Shredded
· 8 Cups Homemade Organic Vegetable Broth Or Commercial Broth – no MSG or Autolyzed Yeast Extract Added.
· ½ Cup Fresh Organic Basil
· Sea Salt And Freshly Ground Pepper To Taste
Directions: Puree half the white beans and set aside. In a large pot, heat olive oil and sauté onion and garlic until translucent. Add carrot, celery and potato and sauté another 2 minutes. Add tomatoes and their liquid, beans, bean puree, salt and pepper. Let simmer about 5 minutes. Add vegetable broth to the mixture. Lightly simmer about 30 minutes. Stir in cabbage, kale and basil. Simmer another 3-5 minutes. Adjust the seasonings to taste and serve.
