Split Pea and Sweet Potato Soup

A favorite recipe from my book, Wellness for Women
· 2 Cups Organic Split Peas, Uncooked
· 5 Cups Water, Or More If Needed. (homemade chicken or veggie broth can be substituted)
· 1 Tablespoon Extra Virgin Olive Oil Or Organic Butter
· 1 Bay Leaf
· 1 Tsp. Sea Salt
· 2 Cups Organic Carrots, Chopped
· 1 Cup Organic Celery, Chopped
· 1 Organic Sweet Potato Or Yam, Peeled And Chopped
· 1 Cup Organic Onion, Chopped
· 1 Tsp. Thyme
· ½ Teaspoon Pepper, Or More To Taste
· 3 Cloves Garlic, Minced
Directions: Sort out any stones from split peas. Rinse and drain. In a large soup pot, sauté the onion and garlic in butter or oil over low heat until translucent. Add celery and carrots and sauté for another 5 minutes. Add the dried split peas, sweet potato or yam, water, bay leaf, salt and thyme. Bring to a boil and then reduce heat and simmer for 1 hour or more, until peas are very soft. Stir occasionally to prevent the split peas from sticking, and to make sure that there is enough water. Add water if the soup looks like it is becoming too dry. Add more water if a thinner soup is desired. Overcooking cannot hurt this soup as long as it is stirred to prevent sticking. You can take half of the soup and puree it and then add it back to the rest of the soup if desired. Add salt and pepper to taste before serving if needed.
