Sautéed Greens with Garlic

Ingredients
2 Tbs. virgin coconut oil, organic butter, or olive oil
1 large bunch of organic kale, chard, collards or any favorite green, coarsely chopped
3 - 4 cloves of garlic, coarsely chopped
Celtic sea salt or Himalayan salt to taste
1. Melt oil in large skillet and add garlic. Sauté on low heat until translucent. Add kale and salt. Sauté until kale is just wilted and turns a vibrant green.
2. Remove from heat, cover skillet and continue to let kale "sweat" in its own juice until kale is tender (about 5 minutes).
3. Serve hot. I kind of like this with a sprinkle of sunflower seeds and a little seaweed, such as dulse or nori for a nice flavor and extra nutrients.
