Gina’s Raw-thentic Harvest Soup

(makes enough for 2 large or 4 small servings)
1 cup or so of warm water
1 large zucchini, chopped
2 large or 4 small tomatoes, quartered
3 stalks celery, chopped
2 cups carrot, chopped
2 dates, pitted
1 clove garlic
2 tsp Himalayan or Celtic salt
½ cup chopped onion or 1 large leek
1 tsp turmeric
1 avocado, seeded and scooped from skin
2 Tablespoons olive oil
Blend all ingredients except oil. Add oil while blender is running at low speed, and continue to blend until creamy. Soooooo good!
