Fruit Crumble

Serves 2
About 4 fresh, ripe peaches, sliced or 2 large apples, cored and sliced
½ cup or so of raw walnuts
3 or 4 pitted dates, soaked if too dry
Generous sprinkle of cinnamon
About ¼ tsp vanilla extract
Pinch of salt
Slice the fruit and divide to line the bottom of 2 very pretty dessert bowls
Pulse the remaining ingredients in a food processor until course and crumbly.
Sprinkle the crumble over the peaches and slice the remaining fruit over the top. Add a dollop of Cashew Cream. My favorite summer dessert!
